Why the products differ
The spread comes from three things, none of which is one product being “fattier” than another:
Pack size. This is the biggest factor. The 45g seasoned pack carries nearly double the calories of the 26g boneless pack, even though per 100g the two differ by only 12 kcal.
Bone-in versus boneless. The seasoned product keeps the bone, so less of each gram is edible and the proportion of skin and tendon is higher — pushing fat to 8.95g per 100g against 6.23g for the boneless version.
The sauce. The Thai-style product carries a sauce layer, so its carbohydrate is slightly higher (3.15–4.52g per 100g), which puts its total energy at the top of the range.
Protein: the real strength
