The Thai sauce leads at 17–18g of protein per 100g, with the boneless line close behind at 16.8g. Both beat the marinated line (13.8g), because the bones take up room in every gram.

The heat ladder
Each line has its own scale, and the published data only ranks heat within a line — so don’t assume a “mild spicy” in one line matches a “slightly spicy” in another.
Boneless — three levels: Original → Mild Spicy → Numbing Spicy
Thai sauce — two levels: Slightly Spicy → Spicier. The second is described as the levelled-up version, with a richer, more intense sauce.

A few things worth weighing up
A bigger pack isn’t automatically better value. The 45g marinated pack is nearly double the size, but it also carries the most sodium — around a quarter of the WHO daily guideline. Smaller packs make it easier to stop at one.
Bone-in means less edible weight per gram. That’s why the marinated line shows lower protein per 100g than the two boneless ones, even though the raw material is the same quality.
